CAMBIOS DE TEXTURA EN LA MADURACIÓN DE FRUTOS DE TOMATE TEXTURE CHANGES ON TOMATO FRUIT RIPENING Ángel Chiesa, Diana Frezza, Silvia Moccia, Karina Pañak, Silvia Camperi, Luis Díaz y Osvaldo Cascone
La textura es un importante parámetro para evaluar la calidad de los frutos de tomate, y está determinada por las características morfológicas y fisiológicas del fruto: firmeza del epicarpio, cantidad de lóculos, y estados de madurez. En este trabajo se relacionan los cambios de textura con parámetros físicos, químicos y bioquímicos evaluados durante el almacenamiento de frutos de tomate. Se utilizaron dos híbridos: uno normal (Iván, BHN-USA) y uno larga vida (Graziella, Zeraim Gedera-Israel), almacenados a 10ºC y 20ºC. Se determinó pérdida de peso, firmeza con penetrómetro Effegi FT 327, actividad de la poligalacturonasa (PG) por Tucker et al.,(1980) y cationes (Ca++, K+, Mg++) por electroforesis capilar, durante cinco semanas. Los datos obtenidos se evaluaron por correlaciones simples entre pares de parámetros. Los efectos de la actividad de la PG en los dos híbridos, el tiempo y las temperaturas de almacenamiento se analizaron por un ANDEVA, las diferencias se determinaron por el test LSD. Todas las comparaciones se efectuaron al 5% de nivel de significancia. El diseño utilizado fue en bloques completamente aleatorizados. Los resultados indican que: a) se encontraron altas correlaciones entre la actividad de la PG y textura, y Ca++ con la textura, b) no se obtuvo relación entre textura y otros cationes analizados, c) diferencias estadísticas significativas se encontraron entre la actividad de la PG con los diferentes tratamientos. Texture is an important parameter to evaluate quality of tomato fruits, and it is determined by fruit morphological and physiological characteristics: epicarp firmness, amount of locules and maturity stage. This study was designed to relate texture changes with chemical and biochemical parameters. The behaviour of Ivan BHN, USA, normal hybrid, and Graziella (Gedera, Israel), long shelf-life hybrid, stored at 10ºC and 20ºC was analysed. Weight loss, texture with penetrometer Effegi FT 327, polygalacturonase (PG) activity by Tucker (1980) and cations (Ca++, K+ , Mg++) by capillary electrophoresis were determined during five weeks. Data obtained were evaluated by simple correlations between pairs of parameters. The effects of PG activity on the two hybrids, storage time and temperature were analysed by ANOVA, and specific differences were determined by LSD. All comparisons were made at a 5% level of significance. The design used was a completely randomized block. The results indicate: a) high correlations were found between PG activity and texture, and Ca++ with texture, b) no relationships between texture and other cations were obtained, c) statistically significant differences of PG activity with the different treatments were found.
