SUMMARY

The effect of single and dual temperature treatments during 50 days of coldstorage on the development of chilling injury in plum fruit cv. Casselman was studied. Intermittent warming consisted in storing the fruit initially at 0°C for 10 days, increased to 7°C for 10 or 20 days, then returned to 0°C again for 20 or 30 days. Intermittent cooling was the opposite. The control fruit were stored at constant temperatures of 0 and 7°C. Chilling injury showed the highest intensity at 0ºC, appearing after ripening as flesh translucency, affecting 55-60% of the fruit. The best treatments were the constant 7ºC and intermittent cooling, since both prevented flesh translucency. Intermittent warming was also effective.

Key words: postharvest, plums, chilling injury, dual temperature, intermittent warming.
